Cookie Monster Cookie Dough Brownies

No bake, gluten, diary, and dye free, with a boost of protein, too!

With a fudgey brownie base, melt in your mouth cookie dough center, and an easy homemade frosting, naturally colored with blue spirulina.

Serves: 20

Ingredients

Brownie base

  • 8 whole Medjool Dates, Soft or soaked
  • 1/2 cup Almond Flour
  • 1/3 cup Cacao Powder, Raw
  • 2 Tbsp Pure Maple Syrup
  • 1 tsp Pure Vanilla Extract

Cookie dough

  • 3/4 cup Cashew Butter
  • 1/2 cup Vanilla Protein Powder
  • 1/4 cup Almond Flour
  • 1/4 cup Coconut Oil, Melted
  • 1/4 cup Pure Maple Syrup
  • 1 tsp Pure Vanilla Extract
  • 1/3 cup Dark Chocolate Chips

Frosting

  • 4 Tbsp Butter, Unsalted
  • 3/4 cup Powdered Monkfruit Sweetener
  • 1 Tbsp Almond Milk
  • 1/2 tsp Pure Vanilla Extract
  • 1/2 tsp Spirulina Powder, Blue

Process

  1. If your dates aren’t very soft then soak them in hot water for 20min + to help soften them before trying to process
  2. Process brownie ingredients together, then press down into 9×5 loaf pan lined with parchment paper
  3. Mix together cookie dough ingredients, and fold in chocolate chips
  4. Press overtop brownie layer and place in the freezer 30min +
  5. Press frosting overtop cookie dough layer, place homemade candy eyes and crushed cookies
  6. Place in the fridge 30min+ or until frosting is firm enough to cut through
  7. Slice and enjoy!
