Chocolate Chip Orange Ricotta Cookies

Ingredients
- 1 cup Gluten-Free Flour
- 3/4 tsp Baking Powder
- 1 pinch Sea Salt
- 1/2 cup Classic Monkfruit Sweetener (with Erythritol) – Lakanto, Or organic cane sugar
- 4 Tbsp Butter, Unsalted
- 1 Tbsp Orange Zest
- 1 whole Egg
- 1/4 cup Ricotta
- 1/2 tsp Pure Vanilla Extract
- 1/2 cup Mini Chocolate Chips, Semi-Sweet
- 3/4 cup Powdered Monkfruit Sweetener – Lakanto, Or organic powdered sugar
- 1 tsp Orange Zest
- 2 – 3 Tbsp Orange Juice

Process
- Use a standing or hand electric mixer to beat softened butter and sugar together
- Add in egg, vanilla, ricotta, and orange zest and beat again
- Add in dry ingredients until combined, then fold in chocolate chips
- Cover and refrigerate at least 1 hour (overnight is fine too)
- Use a 2 tbsp cookie scoop to scoop and roll cookies into balls. Don’t flatten
- Place in cookie sheet and bake at 350 for about 13 minutes
- Allow to cool on the baking sheet for 5 min, then transfer to wire cooling rack to finish cooling
- Whisk glaze ingredients together until desired consistency, then top the cookies with glaze and allow glaze to set, then enjoy!
