Hot Cocoa Frozen S’mores

These Hot Cocoa Frozen S’mores are so easy to make, they’re high protein, gluten free, and have a whipped fluffy texture that just melts in your mouth with each bite!

This version includes a smooth chocolate ganache, a whipped fluffy hot cocoa center, and a gooey marshmallow fluff topping!

Frozen s’mores became trendy this year, and I definitely hopped on board because of how delicious they looked!

I made my own twist with Frozen Snickers Protein S’mores, and they did NOT disappoint!

I actually made a second batch almost immediately, because they were gone so fast!

Why You’ll Love These Hot Cocoa Frozen S’mores

  • They’re gluten free, dairy free, and high protein
  • The texture is whipped, light, and fluffy

You can use homemade marshmallow fluff to make it refined sugar free (my homemade marshmallow fluff is sweetened with honey)! Or you can use a cleaner version like Toonie Moonie, which is made with simple organic ingredients

If you’ve never tried homemade marshmallow fluff it’s SO fun to make! Yes it takes a bit longer than store bought, but I love that I get to control the ingredients in it!

Ingredients

  • 32 Graham cracker squares – I used once again organic gluten free
  • Coconut cool whip – I like SoDelicious. Truwhip will also work. Or, you can use 1 batch of my homemade whipped cream! You can that in THIS recipe
  • 2 scoops Chocolate protein powder

  • Ganahce-
  • 1/2 cup dark chocolate
  • 1/4 cup coconut cream, just the thick part (or creamy peanut butter)
  • 7oz marshmallow fluff – homemade or a cleaner brand like Toonie Moonie

Process

  • Line a 9×9 square pan with parchment paper
  • Line your graham cracker squares to fill the bottom of the pan (I used 16 squares)
  • Melt your chocolate, and combine with your coconut cream or peanut butter for creamy ganache
  • Pour overtop your graham cracker base
  • Place in the freezer
  • Stir your chocolate protein powder & hot cocoa with your tub of coconut whipped cream
  • Spread overtop your firm chocolate base
  • Freeze until firm, about 2 hours
  • Spread marshmallow fluff overtop (it helps to slightly warm it first)
  • Top with remaining 16 graham crackers
  • Freeze for another hour, slice, and enjoy!
  • Enjoy straight from the freezer

I love how every layer has its own texture and flavor! There is SO much to love in every bite!

Variations for Dietary Preferences

  • Cool whip – use any store bought tub, OR my homemade whipped cream to keep it free from refined sugars! Find that recipe HERE
  • Chocolate ganache- feel free to just use melted chocolate. Its just a tad harder to cut through
    • You can also cut some calories and just throw in some dark chocolate chips instead of a full layer of chocolate ganache
  • Chocolate protein powder – feel free to sub for 2 tbsp cocoa powder
  • Hot cocoa- feel free to omit and just use the chocolate protein powder to bring out the cocoa taste
  • Marshmallow fluff – You can use homemade, toonie moonie which uses organic cane sugar and simple ingredients, your own favorite brand, or simply throw some mini marshmallows on top of the chocolate layer
