Chocolate Chip Orange Ricotta Cookies

These gluten free, refined sugar free cookies are super soft and chewy. The ricotta, while tasteless, adds the perfect amount of density & chewiness to these zesty orange & perfectly complimented chocolate chip cookies

Serves: 14

Ingredients

  • 1 cup Gluten-Free Flour
  • 3/4 tsp Baking Powder
  • 1 pinch Sea Salt
  • 1/2 cup Classic Monkfruit Sweetener (with Erythritol) – Lakanto, Or organic cane sugar
  • 4 Tbsp Butter, Unsalted
  • 1 Tbsp Orange Zest
  • 1 whole Egg
  • 1/4 cup Ricotta
  • 1/2 tsp Pure Vanilla Extract
  • 1/2 cup Mini Chocolate Chips, Semi-Sweet
  • 3/4 cup Powdered Monkfruit Sweetener – Lakanto, Or organic powdered sugar
  • 1 tsp Orange Zest
  • 2 – 3 Tbsp Orange Juice

Process

  1. Use a standing or hand electric mixer to beat softened butter and sugar together
  2. Add in egg, vanilla, ricotta, and orange zest and beat again
  3. Add in dry ingredients until combined, then fold in chocolate chips
  4. Cover and refrigerate at least 1 hour (overnight is fine too)
  5. Use a 2 tbsp cookie scoop to scoop and roll cookies into balls. Don’t flatten
  6. Place in cookie sheet and bake at 350 for about 13 minutes
  7. Allow to cool on the baking sheet for 5 min, then transfer to wire cooling rack to finish cooling
  8. Whisk glaze ingredients together until desired consistency, then top the cookies with glaze and allow glaze to set, then enjoy!

Notes

Can easily double the recipe. These make small sized cookies, so depending on the size of your Christmas party you may want more!
