Chocolate Peppermint Frozen S’mores

These Chocolate Peppermint Frozen S’mores are so easy to make, they’re high protein, gluten free, and have a whipped fluffy texture that just melts in your mouth with each bite!

Frozen s’mores became trendy this year, and I definitely hopped on board because of how delicious they looked!

I made my own twist with Frozen Snickers Protein S’mores, and they did NOT disappoint!

I actually made a second batch almost immediately, because they were gone so fast!

Made with a fluffy whipped chocolate filling, a chocolate peppermint ganache layer, and wrapped in gluten free graham crack squares

So simple but SO satisfying

Ingredients

  • Coconut cool whip – I like SoDelicious. Truwhip will also work. Or, you can use 1 batch of my homemade whipped cream! You can that in THIS recipe
  • 2 scoops Chocolate or chocolate peppermint protein powder

  • 1/2 tsp peppermint extract if using plain chocolate protein
  • 32 Graham cracker squares – I used once again organic gluten free
  • Ganahce-
  • 1/2 cup dark chocolate
  • 1/4 cup coconut cream, just the thick part
  • crushed dye-free candy canes (yum earth brand)

Process

  • Line a 9×9 square pan with parchment paper
  • Line your graham cracker squares to fill the bottom of the pan (I used 16 squares)
  • Melt your chocolate, and combine with your coconut cream
  • Pour overtop your graham cracker base, then sprinkle with crushed candy canes
  • Place in the freezer
  • Stir your chocolate or chocolate peppermint protein powder with your tub of coconut whipped cream
  • Spread overtop your firm chocolate base
  • Top with more graham cracker squares
  • Freeze for 3 hours, slice, and enjoy!
  • Enjoy straight from the freezer
  • Keep stored in the freezer for up to 2 months

I love how easy it to just mix the filling ingredients together, and pour!

Variations for Dietary Preferences

  • Cool whip – use any store bought tub, OR my homemade whipped cream to keep it free from refined sugars! Find that recipe HERE
  • Chocolate ganache- feel free to just use melted chocolate. Its just a tad harder to cut through
  • Chocolate protein powder – feel free to sub for 3-4 tbsp cocoa powder
  • Peppermint extract – feel free to omit for a less strong peppermint flavor
