Gluten Free Christmas Tree Cupcakes

Gluten Free Christmas Tree Cupcakes are super cute and easy to make.

The cupcakes themselves are paleo-friendly, gluten free, refined sugar free, and are naturally dyed!

If piping is new to you you’ll be surprised how quickly you get the hang of it! I used a 1M piping tip for this design

I love a pop of color in my treats, but artificial dyes are a big no in our home!

There are a handful of naturally colored colorants, icing, and sprinkles that I like

Here I used Color Kitchen Foods green colorant for the icing, and Go Super Natural star sprinkles

Ingredients

  • 3 whole Eggs
  • 6 Tbsp Coconut Oil, Melted
  • 1/4 cup Almond Milk
  • 1/4 cup Pure Maple Syrup
  • 2/3 cup Coconut Sugar
  • 1/2 tsp Pure Vanilla Extract
  • 1 3/4 cup Almond Flour
  • 2/3 cup Cacao Powder, Raw
  • 1 tsp Baking Soda
  • 1 pinch Sea Salt
  • 2 whole Coconut Cream, Cans
  • 3 Tbsp Pure Maple Syrup
  • 1 tsp Pure Vanilla Extract
  • 1 pinch Artificial Dye-Free Food Coloring, Green

Process

  1. Whisk your wet cupcake ingredients together
  2. Add in dry ingredients and stir to combine
  3. Pour into 12 muffin liners
  4. Bake at 350 for 15-16 minutes
  5. Allow to cool in pan for 5-10 minutes, then move to cooling rack to finish cooling
  6. Prepare icing by whipping ingredients together with a hand or stand mixer
  7. Add in natural green colorant, place in piping bag with 1M piping tip, and swirl overtop cupcakes
  8. decorate with natural sprinkles
  9. Enjoy!

Variations for Dietary Preferences

  • Coconut sugar can sub organic light brown sugar
  • Almond flour – You can not use all purpose flour in place of almond flour, as almond flour is much denser. Oat flour might work, but try 2-4 tbsp less, as it is a tad drier
  • Almond Milk– any milk will work here
  • Pure Maple Syrup – you can sub for another liquid sweetener, such as honey, medjool date syrup, or sugar free syrup
  • Eggs – because this recipe calls for 3 eggs I don’t think that flax eggs will work here
