These Halloween Cookie Dough Cake Pops are not only are super cute, but you will be blown away by how delicious they taste when you bite into the melt-in-your-mouth, high protein cookie dough inside!

Why You’ll Love These Halloween Cookie Dough Cake Pops

  • They’re completely no bake
  • They satisfy your sweet, smooth, and crunchy cravings all in one bite
  • They’re gluten free, refined sugar free, and can be made completely dairy free

Key Ingredients

  • Almond flour – grain free flour to help bind the stickiness of the pure maple syrup & cashew butter together
  • Vanilla Protein Powder – acts as a flour instead of more almond flour, boosting the protein content
  • Cashew Butter – helps bring out that soft, cookie dough texture and taste
  • Collagen – adds a boost of protein, it dissolves right away when whisked into a warm liquid (like the melted coconut oil), and it adds to the gooeyness, too. It can be left out without overly changing the texture of the caramel
  • White Chocolate – You can absolutely use dark chocolate, but I wanted to give these a pop of (all natural) color! I used Pascha Organic Vegan White Chocolate – my favorite!
  • All Natural Colorant Color Kitchen Foods is my favorite brand!

Serves: 6

Ingredients

  • 3/4 cup Cashew Butter
  • 1/3 cup Vanilla Protein Powder
  • 1/4 cup Almond Flour
  • 1/4 cup Coconut Oil, Softened
  • 1/4 cup Pure Maple Syrup
  • 1 tsp Pure Vanilla Extract
  • 1/4 cup Mini Chocolate Chips, Semi-Sweet
  • 1 1/2 cup White Chocolate
  • 3 tsp Artificial Dye-Free Food Coloring

Process

  1. Combine dough ingredients together and press down into 6-7 silicone popsicle molds
  2. Freeze for 1 hour
  3. Make your colors by melted white chocolate with 1-2 tsp coconut oil. Stir in colorant of choice
  4. Remove popsicles from mold and dip into melted white chocolate. It should harden pretty quickly since the dough was frozen. Lay on parchment paper and drizzle with chocolate color of choice
  5. For the eyes & ghosts, simple use white chocolate to create the shape on parchment paper and freeze 5 minutes until hardened. Use melted chocolate for eyes and pupils
  6. Enjoy!
  7. Keep stored in the fridge!

Variations for Dietary Preferences

  • Cashew Butter– can sub vanilla oat butter or sunbutter while keeping the flavor profile pretty similar. You can use peanut butter or almond butter as well, but those flavors will overpower the cookie dough
  • Almond flour – can sub for oat flour. Use 3 tbsp
  • Coconut oil – can sub for another neutral oil, such as algae oil or avocado oil
  • Protein powder – can be subbed for oat flour

Notes

You can keep these totally dairy free by using dairy free mini chocolate chips and dairy free white chocolate.
