Cookie Monster Cookie Dough Brownies

No bake, gluten, diary, and dye free, with a boost of protein, too!
With a fudgey brownie base, melt in your mouth cookie dough center, and an easy homemade frosting, naturally colored with blue spirulina.

Serves: 20
Ingredients
Brownie base
- 8 whole Medjool Dates, Soft or soaked
- 1/2 cup Almond Flour
- 1/3 cup Cacao Powder, Raw
- 2 Tbsp Pure Maple Syrup
- 1 tsp Pure Vanilla Extract
Cookie dough
- 3/4 cup Cashew Butter
- 1/2 cup Vanilla Protein Powder
- 1/4 cup Almond Flour
- 1/4 cup Coconut Oil, Melted
- 1/4 cup Pure Maple Syrup
- 1 tsp Pure Vanilla Extract
- 1/3 cup Dark Chocolate Chips
Frosting
- 4 Tbsp Butter, Unsalted
- 3/4 cup Powdered Monkfruit Sweetener
- 1 Tbsp Almond Milk
- 1/2 tsp Pure Vanilla Extract
- 1/2 tsp Spirulina Powder, Blue

Process
- If your dates aren’t very soft then soak them in hot water for 20min + to help soften them before trying to process
- Process brownie ingredients together, then press down into 9×5 loaf pan lined with parchment paper
- Mix together cookie dough ingredients, and fold in chocolate chips
- Press overtop brownie layer and place in the freezer 30min +
- Press frosting overtop cookie dough layer, place homemade candy eyes and crushed cookies
- Place in the fridge 30min+ or until frosting is firm enough to cut through
- Slice and enjoy!
