No Bake Brownie Stuffed Cookie Dough Bites

Your ultimate sweet tooth fix! Made gluten, dairy, and refined sugar free, with a protein boost! These babies are completely no bake and couldn’t be easier to make & have on hand for when that sweet tooth strikes!

Serves: 18

Ingredients

  • 3/4 cup Cashew Butter
  • 1/3 cup Vanilla Protein Powder
  • 1/4 cup Almond Flour
  • 1/4 cup Coconut Oil
  • 1/4 cup Pure Maple Syrup
  • 1 tsp Pure Vanilla Extract
  • 1/3 cup Baking Chocolate Chips
  • 4 whole Medjool Dates, soft or soaked
  • 1/4 cup Almond Flour
  • 1 Tbsp Pure Maple Syrup
  • 2 1/2 Tbsp Cocoa Powder
  • 1/2 tsp Pure Vanilla Extract
  • 1 cup Dark Chocolate
  • 1 Tbsp Coconut Oil

Process

  1. Melt chocolate with coconut oil, line silicone cups with melted chocolate and freeze until hard
  2. Combine dough ingredients together until smooth, then fold in chocolate chips
  3. Pour cookie dough into hardened chocolate cups
  4. Combine brownie ingredients together in food processor. If dates are not soft, soak them in hot water for 20 min before blending
  5. Roll into balls, and press into the center of cookie dough
  6. Pour more chocolate overtop and place in the freezer for 30min +
  7. Sprinkle with flakey sea salt, and enjoy!
  8. The cups are large, so I sliced in half to enjoy half at a time
