Ingredients

  • 1 1/2 cups Gluten-Free Flour
  • 1 tsp Baking Powder
  • 1/4 tsp Sea Salt
  • 1/4 cup Orange Juice
  • 1 Tbsp Orange Zest
  • 1/4 cup Almond Milk, any milk
  • 6 Tbsp Butter, Unsalted, vegan butter stick will also work. room temp
  • 3/4 cup Classic Monkfruit Sweetener (with Allulose), or organic cane sugar
  • 2 whole Eggs, room temp
  • 1 1/2 cups Cranberries, Fresh
  • Glaze
  • 3/4 cup Powdered Monkfruit Sweetener, or organic powdered sugar
  • 1 – 2 Tbsp Orange Juice
  • 1/2 tsp Orange Zest

Process

  1. Preheat oven to 350F and line loaf pan with parchment paper
  2. In a small whisk flour, baking powder, and salt together
  3. In a separate small bowl combine orange juice, zest, and milk
  4. In a separate large bowl, use an electric mixer to cream butter and sugar together. Then add eggs and mix again until combined
  5. Alternately add the flour & juice mixture to your large bowl until just combined
  6. Coat cranberries in a little bit of flour to fully coat, then fold those into the batter
  7. Pour into loaf tin and bake for 45-50 min until golden on top
  8. Allow to cool 10 min in the pan, then remove and place on cooling rack
  9. Make glaze by combing ingredients together until drippy, adding juice to your desired consistency
  10. Enjoy!

Variations for Dietary Preferences

  • Gluten free flour– all purpose flour will work fine here as well
  • Almond Milk – any milk will work here
  • Butter– a vegan butter stick will also work here
  • Monkfruit– you can use organic cane sugar for the loaf, and organic powdered sugar in the glaze
    • I specify organic because cane sugar is one of the top 5 most heavily sprayed glyphosate crops. When you opt for organic you are getting cane sugar that has not been sprayed with glyphosate
    • Light brown coconut sugar (one that specifies is a replacement for cane sugar) would work also, but your loaf will come out a tad darker in color

Notes

You can store the loaf or some of it in the freezer prior to adding the glaze. Let thaw under refrigeration
