Gluten Free Peanut Butter Cup Cookies

These Gluten Free Peanut Butter Cup Cookies are soft and chewy, dye free peanut butter cookies with organic peanut butter cups and naturally colored chocolate gems!

These are super easy to throw together and bake in just 10 minutes!

Serves: 12

Ingredients

  • 1/2 cup Creamy Peanut Butter
  • 1/4 cup Butter, Unsalted, Or Vegan butter stick
  • 2/3 cup Brown Monkfruit Sweetener – Lakanto, Or brown sugar or coconut sugar
  • 1 whole Egg, Room temp
  • 1 tsp Pure Vanilla Extract
  • 1 cup Almond Flour
  • 1/2 tsp Baking Soda
  • 1/4 tsp Sea Salt
  • 3 Tbsp Dark Chocolate Peanut Gems – Unreal

Process

  1. Beat wet ingredients together for cookies
  2. Add in dry ingredients
  3. Fold in chocolate chips, roll into balls, and then press chopped up peanut butter cups & naturally colored chocolate gems on top of cookies (I used lakanto chocolate gems and unreal snacks peanut butter cups)
  4. Bake at 350 for 10-12 min
  5. Right out the oven use a circle cookie cutter to swirl the cookies around within to regain perfect circle shape and sprinkle with flakey sea salt
  6. Enjoy!

Variations for Dietary Preferences

  • Butter– if dairy free you can sub this foe vegan butter or coconut oil
  • Sweetener – You can use coconut sugar or organic light brown sugar in place of the sugar free sweetener in the cookies
  • Egg – I have not tried for certain, but a flax egg should hold up well in this recipe
  • Almond flour – unfortunately, almond flour holds moisture much differently than other flours. I don’t believe substituting another flour would work well here.
