Protein Cookie Dough Bark
This Protein Cookie Dough Bark is made up of a melt-in-your-mouth cookie dough smothered with a rich chocolate ganache coating.
Gluten free, dairy free, and refined sugar free, this easy snack is sure to satisfy that sweet tooth fix!
I used my favorite clean ingredient and nourishing protein powder from Just Ingredients brand.

Ingredients
- 1/2 cup Almond Flour
- 1/2 cup Vanilla Protein Powder – use code colleenF10 to save. I LOVE the new french vanilla bone broth protein powder. It’s incredibly nourishing, contains nothing artificial, and is a great option for those of us who can’t tolerate dairy or whey. If you can tolerate it, her french vanilla 100% grass fed whey is a great option, too!
- 1/4 cup Cashew Butter
- 1/4 cup Pure Maple Syrup
- 1/2 Tbsp Coconut Oil, Melted
- 1 tsp Pure Vanilla Extract
- 1/4 cup Mini Chocolate Chips, Semi-Sweet
- 1/4 cup Dark Chocolate Chips
- 1/4 cup Creamy Peanut Butter
- 1 tsp Coconut Oil

Process
- Combine cookie dough ingredients together, and fold in chocolate chips
- Press down onto a baking sheet lined with parchment paper
- Melt chocolate chips, coconut oil, and peanut butter together until creamy
- Pour and spread overtop cookie dough
- Top with dyes free chocolate gems and flakey sea salt
- Refrigerate for 2 hours, or freeze at least 45 min
- Slice and enjoy!
- Keep stored in the fridge
Variations for Dietary Preferences
- Cashew butter – can replace with sunbutter or vanilla oat butter like the oat haus brand. You can also use peanut butter for a peanut butter cookie dough flavor
- You can replace the pure maple syrup with honey
- Oat flour will probably work in place of the almond flour since it’s no bake. You may need 1-2 tbsp less since it’s a tad drier.
- If you’d like to replace the protein powder you can replace with oat flour


I love how easy this recipe is for an anytime treat, or make it festive! It was a hit with the kids for Valentines day! I just changed the chocolate gems (YumEarth, Unreal Snacks, and Lakanto are all dye-free brands I like!) and for the Valentines bark I made it peanut butter instead of cashew butter!
