Salted Caramel and Brownie Protein Ice Cream

This ninja creami salted caramel and brownie protein ice cream is incredibly smooth & creamy, with swirls of salted caramel, and a homemade protein brownie crumbled throughout.

Ingredients

  • 1 whole Lite Coconut Milk, 1 can
  • 1/3 cup Vanilla Protein Powder
  • 2 Tbsp Pure Maple Syrup
  • 1 tsp Pure Vanilla Extract
  • 3 grams Xanthum Gum
  • 1/2 Tbsp Coconut Oil
  • 1 Tbsp Pure Maple Syrup
  • 1 1/2 Tbsp Cashew Butter, Or peanut butter
  • 1 Tbsp Collagen
  • 1 whole Fudgey Protein Brownies (click for recipe)

Kitchen equipment needed

  • Ninja creami – any version will work. We love the ninja swirl, mostly because the kids find it more appealing in the soft serve swirl look, but as long as you’ve got the ice cream setting then you’re all set!
    • This particular recipe does require the creami. There is not enough fat to make this ice cream in a loaf tin. However, you can check out this Vegan Chocolate Chip Cookie Dough Ice Cream that requires no ice cream maker! Feel free to swap the cookie dough chunks for the caramel and brownie!
  • Frother – to fully incorporate the ingredients to become one smoothy mixture

Process

  1. Froth / mix ice cream ingredients together until clumps are gone
  2. Pour into ninja creami container and freeze overnight
  3. Spin on scoop able ice cream mode. I did one re-spin after for perfect creaminess
  4. Whisk caramel ingredients together until smooth & drippy
  5. Make a divot in the center of your center, pour caramel inside, and respin once (this will fully combine it, but you can skip this step and just drizzle it on top too)
  6. Crumble up a protein brownie for topping
  7. Enjoy!

Variations for Dietary Preferences

  • Coconut free – you can use any full fat milk. Fairlife milk would be a great addition to up the protein
  • You can leave the collagen out of the caramel if you wish. It just adds a bit to the gooeyness
  • You can use medjool date syrup or honey in place of pure maple syrup
  • You can use a plant based vanilla protein powder to assure this is fully vegan if need be

Notes

Xanthum gum can be hard to digest if you’ve got a sensitivity to gums or have a sensitive stomach in general. This is a very small amount so I haven’t found any issues at all, but it adds the perfect creaminess!
