Another ice cream truck favorite! But these strawberry shortcake popsicles are gluten free, can be made completely dairy free, they’re refined sugar free, AND has an optional protein boost, too!

Key Ingredients for Strawberry Shortcake Popsicles

  • Coconut Cream – just the thick part. Do not use the clear liquid from the can. It helps to refrigerate your can of coconut milk overnight to separate the cream from the milk. Coconut cream gives the creamiest ice cream texture!
    • Not dairy free? You can use cottage cheese, blended, in place of or in addition to the coconut cream for an ever higher protein treat!
  • Strawberries -A must for the signature strawberry taste! You can use fresh or frozen
  • Pure Maple Syrup – adds a touch of sweetness without needing refined table sugar. Not to be confused with pancake syrup, pure maple syrup is lower glycemic index, and actually contains nutrients like potassium and magnesium
  • Strawberry Protein Powder – Adds a boost of nourishing protein while enchancing the strawberry flavor, too! I used Just Ingredients brand, which is made with 100% grass fed whey, organic freeze dried strawberries, and never anything artificial! I feel comfortable giving to my kids, since there are no gums, artificial dyes, or ingredients that may be hard to digest. Code colleenF10 saves you sitewide
    • You can omit the protein powder without affecting the texture
  • Freeze Dried Strawberries – add a crunch to the coating without the need for candy or jello packets
  • Vanilla cookies – I like Made Good Snacks brand vanilla gluten free cookies, finely crushed, to add to the crunch. You can use any golden / vanilla cookie you’d like

Serves: 6

Ingredients

  • 2 cups Frozen Strawberries
  • 1 whole Coconut Cream, 1 can- just the thick part
  • 1 whole Banana, Frozen
  • 1/4 cup Almond Milk, Any milk or even juice
  • 1 whole Strawberry Protein Powder, 1 heaping scoop
  • 2 Tbsp Pure Maple Syrup
  • 1/2 cup Freeze-Dried Strawberries
  • 1/2 cup Oreo, Golden, **

Process

  1. Blend all ingredients together until smooth
  2. Pour into 6 popsicle molds
  3. Freeze for 3-4 hours
  4. Lightly process freeze dried strawberries and vanilla cookies until crumbled
  5. Remove from freezer, run under hot water to loosen from molds, then roll in crumbled strawberry and cookie mix, pressing into the popsicles
  6. Enjoy right away or place back in the freezer in an airtight container

Variations for Dietary Preferences

  • Coconut free – if you can tolerate dairy you can replace the coconut cream with full fat cottage cheese, blended until smooth
    • This will also up the protein count!
  • You can replace the pure maple syrup with honey or medjool date syrup
  • You can use vanilla protein powder in place of the strawberry protein powder, or omit the protein powder all together
  • You can replace the banana with about 1/2 cup more strawberries, or 1/2 cup avocado, or 2-3tbsp cashew butter; all of these will add the creaminess that frozen banana provides
  • You can use any milk you’d like

Ingredients

  • 2 cups Frozen Strawberries
  • 1 can Coconut Cream just the thick part
  • 1 Frozen Banana
  • 1/4 cup Coconut Milk Any milk
  • 1 heaping scoop Strawberries & Cream Protein Powder use code colleenF10 to save
  • 2 Tbsp Pure Maple Syrup
  • 1/2 cup Freeze-Dried Strawberries
  • 1/2 cup Vanilla Cookies I used MadeGoodFoods

Instructions

  • Blend all ingredients together until smooth
  • Pour into 6 popsicle molds
  • Freeze for 3-4 hours
  • Lightly process freeze dried strawberries and vanilla cookies until crumbled
  • Remove from freezer, run under hot water to loosen from molds, dampen popsicles or let them melt a tad, then roll in crumbled strawberry and cookie mix, pressing into the popsicles
  • Enjoy right away or place back in the freezer in an airtight container

Notes

I used vanilla cookies from Made Good Foods. You can use golden Oreos or any other vanilla cookies you wish SUBSTITUTIONS: you can replace banana with more strawberries you can use heavy cream in place of coconut cream you can leave out the protein powder you can use any milk or even juice for the liquid you can use honey instead of syrup for your sweetener.
