Protein Packed Cookie Dough Brownies
Completely no bake, gluten free, refined sugar free, and high protein cookie dough brownies! I used my favorite fudgey date brownies, and topped with my new favorite fixation- cottage cheese cookie dough!
Blended to velvety smooth goodness, so no texture scares here! You do want to be sure you like the taste of your protein powder here!

Ingredients
Brownie base
- 8 whole Medjool Dates
- 1/2 cup Almond Flour
- 4 Tbsp Chocolate Protein Powder
- 2 Tbsp Cocoa Powder
- 2 Tbsp Pure Maple Syrup
- 1 tsp Pure Vanilla Extract
Cookie Dough
- 1 cup Cottage Cheese, 4 or 2% is fine
- 1/2 cup Vanilla Protein Powder
- 1 1/4 cup Almond Flour
- 2 Tbsp Pure Maple Syrup
- 2 Tbsp Cashew Butter
- 1 tsp Vanilla Extract
- 1/3 cup Mini Chocolate Chips, Semi-Sweet


Process
- Process brownie ingredients together. If your dates are not soft you’ll want to soak them in hot water for 5 minutes first
- Press brownie dough down onto 9×5 loaf tin lined with parchment paper
- Place in the freezer
- Blend cookie dough ingredients until smooth, scraping the edges as needed. It will be thick
- Fold in chocolate chips
- Press overtop brownie layer, smooth out with a spatula sprayed with nonstick spray
- Place in the freezer for 1 hour
- Then slice into squares and indulge away!
- Keep stored in the fridge or freezer
Notes
Oat flour will probably work in place of the almond flour since it’s no bake. You may need 1-2 tbsp less since it’s a tad drier. For the brownie base you can replace chocolate protein powder for more cocoa powder if you wish. For cookie dough, if you’d like to replace the protein powder you can up the almond flour to 1.5 cups and add .25 cup oat flour in place of the protein.
