Healthy Orange Chicken

Skip the heavy takeout and make this delicious baked orange chicken in the comfort of your own home! Made with wholesome ingredients you can feel good about.

Serves: 4
Ingredients
- 2 lb Chicken Breast, Or thigh
- 1 whole Egg
- 2/3 cup Cassava Flour, Or gf flour
- 2/3 cup Arrowroot Flour
- 3/4 cup Orange Juice
- 1/4 cup Coconut Aminos
- 1/4 cup Water
- 2 Tbsp Rice Vinegar
- 2 Tbsp Coconut Sugar
- 1/2 tsp Garlic Powder
- 1/4 tsp Ginger, Ground
- 1 pinch Red Pepper Flakes, Optional
- 1 Tbsp Arrowroot Flour, +2 tbsp water

Process
- Make your orange sauce but combining all ingredients minus arrowroot flour over stovetop
- Heat over low-medium heat, stirring, until bubbling starts
- In a small bowl mix together arrowroot + 2 tbsp water. Once dissolved stir into orange sauce and your sauce will start to thicken.
- If using right away you can set your orange sauce aside
- You can make orange sauce ahead of time and place in an airtight container in the fridge
- Chop chicken into bite sized pieces and place on a bowl with beaten egg to coat all chicken
- roll each piece into flour mixture and place on baking sheet
- Sprinkle with sea salt and spray tops with avocado oil spray
- Bake at 400 for 15 min, then flip and spray tops with more avocado oil spray and bake an additional 10-15 min until golden
- Toss in orange sauce and serve over jasmine rice and veggies
- Sprinkle with green onion and/or sesame seeds
