Healthy Orange Chicken

Ingredients

Chicken

  • 2 lb Chicken Breast Or thigh
  • 1 whole Egg
  • 2/3 cup Cassava Flour Or gf flour
  • 2/3 cup Arrowroot Flour

Orange sauce

  • 3/4 cup Orange Juice
  • 1/4 cup Coconut Aminos
  • 1/4 cup Water
  • 2 Tbsp Rice Vinegar
  • 2 Tbsp Coconut Sugar
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Ginger Ground
  • 1 pinch Red Pepper Flakes Optional
  • 1 Tbsp Arrowroot Flour +2 tbsp water

Instructions

  • Make your orange sauce but combining all ingredients minus arrowroot flour over stovetop
  • Heat over low-medium heat, stirring, until bubbling starts
  • In a small bowl mix together arrowroot + 2 tbsp water. Once dissolved stir into orange sauce and your sauce will start to thicken.
  • If using right away you can set your orange sauce aside
  • You can make orange sauce ahead of time and place in an airtight container in the fridge
  • Chop chicken into bite sized pieces and place on a bowl with beaten egg to coat all chicken
  • roll each piece into flour mixture and place on baking sheet
  • Sprinkle with sea salt and spray tops with avocado oil spray
  • Bake at 400 for 15 min, then flip and spray tops with more avocado oil spray and bake an additional 10-15 min until golden
  • Toss in orange sauce and serve over jasmine rice and veggies
  • Sprinkle with green onion and/or sesame seeds
