Vegan Chocolate Chip Cookies

Soft and chewy chocolate chip cookies! No one would ever guess they’re gluten free and completely vegan, too!

Serves: 12

Ingredients

  • 1 3/4 cup Gluten-Free Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1 pinch Sea Salt
  • 1/3 cup Classic Monkfruit Sweetener (with Allulose) – Lakanto, Or organic cane sugar
  • 1/2 cup Brown Monkfruit Sweetener – Lakanto, Or brown sugar. +2tbsp
  • 1/3 cup Avocado Oil, +2tbsp
  • 1/4 cup Almond Milk
  • 1/2 cup 70% Cacao Organic Vegan Bitter-Sweet Dark Chocolate Chips with Organic Stevia – Pascha Chocolate Co.
  • 1 tsp Vanilla Extract

Process

  1. Whisk dry ingredients together in one bowl
  2. Whisk wet ingredients together in another bowl, then combine the two
  3. Fold in chocolate chips
  4. Cover and refrigerate dough for 30min+
  5. Roll into ~2 tbsp balls, flatten to desired thickness (these won’t spread much), and place naturally colored chocolate gems on top
  6. Bake at 350 for 10-12 min
  7. Allow to cool on baking sheet for 5min, then transfer to wire cooling rack until completely cool
  8. Enjoy!
