Vegan Chocolate Chip Cookies

Soft and chewy chocolate chip cookies! No one would ever guess they're gluten free and completely vegan, too!

Ingredients

  • 1 3/4 cup Gluten-Free Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1 pinch Sea Salt
  • 1/3 cup Classic Monkfruit Sweetener with Allulose - Lakanto, Or organic cane sugar
  • 1/2 cup Brown Monkfruit Sweetener - Lakanto Or brown sugar. +2tbsp
  • 1/3 cup Avocado Oil +2tbsp
  • 1/4 cup Almond Milk
  • 1/2 cup 70% Cacao Organic Vegan Bitter-Sweet Dark Chocolate Chips with Organic Stevia - Pascha Chocolate Co.
  • 1 tsp Vanilla Extract

Instructions

  • Whisk dry ingredients together in one bowl
  • Whisk wet ingredients together in another bowl, then combine the two
  • Fold in chocolate chips
  • Cover and refrigerate dough for 30min+
  • Roll into ~2 tbsp balls, flatten to desired thickness (these won't spread much), and place naturally colored chocolate gems on top
  • Bake at 350 for 10-12 min
  • Allow to cool on baking sheet for 5min, then transfer to wire cooling rack until completely cool
  • Enjoy!
