Whisk dry ingredients together in one bowl
Whisk wet ingredients together in another bowl, then combine the two
Fold in chocolate chips
Cover and refrigerate dough for 30min+
Roll into ~2 tbsp balls, flatten to desired thickness (these won't spread much), and place naturally colored chocolate gems on top
Bake at 350 for 10-12 min
Allow to cool on baking sheet for 5min, then transfer to wire cooling rack until completely cool
