These Healthy Sugar Cookie Truffles are easy, no bake, and made with wholesome ingredients!

They’re gluten free and with a protein boost, although your guests would never know!

Key Ingredients

  • Vanilla Bean Ghee– the soft texture resembles that of softened butter, while still holding its form. The vanilla bean flavor really brings out that sugar cookie taste, too!
  • Cashew Butter – relatively neutral in taste, however, when combined with the vanilla bean ghee and sweeteners and extracts, the sugar cookie flavor really comes to light. The cashew butter also contributes to that melt-in-your-mouth cookie dough texture
  • Almond Flour– helps bind the wet ingredients together, without needing refined white flour
  • Pure Maple Syrup – not to be confused with pancake syrup, pure maple syrup adds sweetness without needing refined table sugar. It’s lower glycemic index too, making it more friendly on your blood sugar

Serves: 9

Ingredients

  • 1/4 cup Vanilla Bean Ghee – 4th & Heart, Or plain ghee, or coconut oil* melted
  • 1/4 cup Cashew Butter
  • 1/4 cup Vanilla Protein Powder
  • 1 cup Almond Flour
  • 1/4 cup Pure Maple Syrup
  • 1 tsp Pure Vanilla Extract
  • 1/4 tsp Almond Extract
  • 1 Tbsp Sprinkles
  • 1/2 cup Organic Vegan White Baking Chips – Pascha Chocolate Co.

Process

  1. Combine all the dough ingredients together until smooth
  2. The vanilla ghee add to the distinct sugar cookie taste here, but plain ghee or coconut oil will also work
  3. Fold in sprinkles if you’d like in the cookie dough as well
  4. Refrigerate dough for 30 min
  5. Roll into balls. I used a 2tbsp cookie scoop
  6. Dip in melted white chocolate, drip of excess, place on parchment paper, and top with natural sprinkles (go super natural brand here)
  7. Place in the fridge 15min until white chocolate has hardened, then enjoy!
  8. Store in the fridge
