Cosmic Brownie Protein Popsicles
These cosmic brownie protein popsicles have an incredibly creamy chocolate ice cream, coated in a velvety smooth chocolate ganache, and crushed brownie & chocolate gems to top!
They’re gluten free, refined sugar free, and yes those colored gems are free from artificial dyes!

Why You’ll Love These Cosmic Brownie Protein Popsicles
- They’re gluten free, high protein, and sweetened without refined sugars
- The ice cream is incredibly smooth and creamy, even when frozen for a prolonged period of time
- They’re customizable in their calorie density. You can omit the ganache and just do the brownie topping, you can use low fat cottage cheese, you can go up or down on the amount of protein powder, and on the amount of brownie topping
- They can be dairy free as well


Key Ingredients
- Cottage Cheese – full fat works best here for the creamiest texture. Adds a boost of protein, and tends to be way less icy when frozen, compared to yogurt
- You can replace this with coconut cream to keep them vegan!
- Hazelnut Butter – adds to the fudgey chocolate ice cream. You can also almond butter as well! The added fat from a nut butter contributes to the creaminess of the ice cream
- Chocolate Protein Powder – blends to complete smoothness and adds a boost of protein! This can be replaced with 2 tbsp of cocoa powder as well
- Pure Maple Syrup – adds sweetness without using refined sugars, which are more likely to spike your blood sugar. Don’t confuse this with pancake syrup.

How to Make Cosmic Brownie Protein Popsicles
- Blend your cottage cheese, hazelnut butter, pure maple syrup, and chocolate protein powder together until smooth, scraping the sides as needed
- Pour into 4 popsicle molds, place your popsicle stick in place, and freeze for 4-5 hours
- Make ganache by melting chocolate and nut butter together in 30 second intervals, stirring in between each interval, until smooth
- Crumble a brownie ( I like Simple Mills individual brownie bars. You can use any or even chocolate cookies crushed ), and add your naturally colored chocolate gems to a small plate
- Remove your popsicles from their mold, dip fully or partially into ganache, then immediately onto your plate with brownie crumbs to coat fully
- Place on a baking sheet lined with parchment paper then back to the freeze for an additional 10-15 minutes until ganache is firm to the touch

Variations for Dietary Preferences
- Cottage Cheese – if dairy free you can sub this for coconut cream. Just the thick part from the can; not the clear liquid
- Protein Powder – You can use a plant based chocolate protein powder if needed. You can also omit the protein powder and replace with 2 tbsp cocoa powder
- Pure Maple Syrup – you can use medjool date syrup or sugar free syrup
- Hazelnut butter – adds to the rich chocolate taste, but you can also use almond butter
- Coconut Cream – you can use a 2:1 ratio of chocolate to coconut cream for the ganache OR you can use a 1:2 ratio of dark chocolate to peanut butter
