Cosmic Brownie Protein Popsicles

Smooth and creamy chocolate protein popsicles, wrapped in a velvety smooth chocolate ganache, and coated with crumbled brownies & naturally colored chocolate gems

Ingredients

Ice Cream

  • 1 cup full fat cottage cheese *
  • 1/4 cup hazelnut butter or almond butter *
  • 3 tbsp pure maple syrup *
  • 3 tbsp chocolate protein powder *

Ganache

  • 1/2 cup dark chocolate
  • 1/4 cup coconut cream *

For topping

Instructions

  • Blend your cottage cheese, hazelnut butter, pure maple syrup, and chocolate protein powder together until smooth, scraping the sides as needed
  • Pour into 4 popsicle molds, place your popsicle stick in place, and freeze for 4-5 hours
  • Make ganache by melting chocolate and nut butter together in 30 second intervals, stirring in between each interval, until smooth
  • Crumble a brownie ( I like Simple Mills individual brownie bars. You can use any or even chocolate cookies crushed ), and add your naturally colored chocolate gems to a small plate
  • Remove your popsicles from their mold, dip fully or partially into ganache, then immediately onto your plate with brownie crumbs to coat fully
  • Place on a baking sheet lined with parchment paper then back to the freeze for an additional 10-15 minutes until ganache is firm to the touch
  • Enjoy!
