The coconut butter glaze is my favorite, because it gives a little more texture, without loads of sweetness! Most glazes are a combination of powdered sugar and milk or water

Key Ingredients

  • Cashew butter – the base for the cookie dough texture. Cashew butter is pretty neautral in taste, so it won’t take away from the strawberry flavor
  • Strawberry Protein Powder – adds a punch of protein and some natural flavor, since my favorite strawberry protein powder uses organic freeze dried strawberries to bring out the flavor. It doesn’t get better than that! Use code colleenF10 to save sitewide
  • Pure Maple Syrup – adds sweetness without the need for refined table sugar
  • Mini White Chocolate Chips – I like Pascha Organic brand, which is vegan and made with organic ingredients
  • Coconut Butter – adds texture to the bars, without more sugar. Many glazes are made with just powdered sugar and milk or water
  • Freeze Dried Strawberries – adds more flavor and a little crunch with each bite

How to Make Strawberries & Cream Copycat Perfect Bars

  • Combine your cashew butter, strawberry protein powder, pure maple syrup, and almond flour together until dough-like
  • Fold in white chocolate chips and freeze dried strawberries, crushed
  • Press into loaf tin lined with parchment paper, and refrigerate 1 hour
  • Slice into 6 bars, or smaller squares
  • Drizzle with melted coconut butter and crumbled freeze dried strawberries
  • Place back in the fridge about 10 minutes until the coconut butter is firm
  • Enjoy!
  • Keep stored in an airtight container in the fridge for up to 6 days, or in the freezer for 3 months

I love how easy it to just add all of the ingredients to a bowl, press, slice, and enjoy!

Variations for Dietary Preferences

  • Cashew butter– you can use sunbutter or vanilla oat butter, like oat haus brand. You could also use almond butter or peanut butter, but please note that flavor profiles are stronger than cashew butter, and they’ll taste more like a pb&j or almond butter & strawberry if you go with one of these options
  • Strawberry protein powder – You can replace will vanilla protein powder and add roughly 3 tbsp freeze dried strawberry powder (and leave out the almond flour if you do this)
    • If you don’t want to use protein powder at all you can use about 5 tbsp oat flour plus 3-4 tbsp freeze dried strawberry powder
  • Coconut butter – these will taste great even without the glaze. Or, mix about 2 tbsp powdered sugar with 1/2 tbsp milk (maybe a tad more) until a glaze like texture is achieved
  • Pure Maple Syrup – feel free to swap for honey or sugar free syrup
