Strawberries & Cream Copycat Perfect Bars

Melt-in-your-mouth cookie dough texture protein bars! Gluten free, refined sugar free, and easily vegan, too!

Ingredients

  • 1/2 cup cashew butter
  • 6 tbsp strawberry protein powder use code colleenF10 to save
  • 2 tbsp almond flour
  • 3 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp mini white chocolate chips
  • 2 tbsp freeze dried strawberries slightly crushed
  • Glaze
  • 1-2 tbsp coconut butter melted
  • 1 tbsp freeze dried strawberries crushed

Instructions

  • Combine your cashew butter, strawberry protein powder, pure maple syrup, vanilla, and almond flour together until dough-like
  • Fold in white chocolate chips and freeze dried strawberries, crushed
  • Press into loaf tin lined with parchment paper, and refrigerate 1 hour
  • Slice into 6 bars, or smaller squares
  • Drizzle with melted coconut butter and crumbled freeze dried strawberries
  • Place back in the fridge about 10 minutes until the coconut butter is firm
  • Enjoy!
  • Keep stored in an airtight container in the fridge for up to 6 days, or in the freezer for 3 months
