Thick and Fluffy Cottage Cheese Pancakes

These Thick and Fluffy Cottage Cheese Pancakes are gluten free, refined sugar free, and high protein!
They’re incredibly thick and fluffy and customizable with mix-ins or toppings of choice!
I even tweaked them to make a Pumpkin Cottage Cheese Pancake Recipe!

Ingredients
- 1/2 cup Cottage Cheese
- 2 whole Eggs
- 3 Tbsp Almond Milk
- 1 Tbsp Pure Maple Syrup
- 1 Tbsp Butter, Unsalted, Melted
- 3/4 cup Gluten-Free Flour
- 1/4 cup Vanilla Protein Powder
- 1 1/2 tsp Baking Powder
- 2 Tbsp Mini Chocolate Chips, Semi-Sweet

Process
- Blend wet ingredients together
- Whisk flour & baking powder, then add in wet ingredients and combine
- Fold in sprinkles, chocolate chips, or add ins of choice
- Add to preheated skillet and cook a few minutes per side
- Enjoy!
Variations for Dietary Preferences
- Cottage cheese– you should be able to sub for full fat greek yogurt, or vegan greek style yogurt
- Pure maple syrup – feel free to sub honey, medjool date syrup, or sugar free syrup
- Gluten free 1:1 flour – all purpose flour will also work. Alternative flours like almond flour and coconut flour will not work for this particular recipe
- Almond Milk – feel free to sub milk of choice
- Butter – feel free to sub vegan butter or coconut oil

This makes 4 large thick pancakes. You can make them smaller or double the batch! They freeze well too
