Why You’ll Love These Healthy Homemade Ferrero Rocher

  • They’re gluten free, dairy free, and refined sugar free
  • They’re made with whole food ingredients
  • They’re simple to make
  • They’re made with real hazelnuts and hazelnut butter (no, NOT sugar packed nutella)
  • They taste even better than store bought!

Ingredients

  • Base
  • 8 whole medjool dates
  • 1/2 cup almond flour
  • 1/3 cup cocoa powder
  • 3 tbsp almond butter
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla syrup
  • Center
  • 9 whole hazelnuts
  • 1/4 cup hazelnut butter – I used Artisana Organics Hazelnut Cacao Spread
  • For coating
  • 3/4 cup dark chocolate
  • 1 tbsp coconut oil
  • ~2 tbsp finely chopped hazelnuts, and/or puffed quinoa

Process

  • Dip each hazelnut in hazelnut butter then place in the freezer for 1 hour
  • Process brownie ingredients together until smooth
  • Roll into 9 balls
  • Flatten each ball and place frozen hazelnut butter wrapped hazelnut inside the brownie dough and wrap the brownie dough around it to fully enclose, place stuffed balls in the fridge
  • Melt chocolate and coconut oil together until smooth, in 30 second intervals, then stir in crushed hazelnuts
  • Dip each brownie ball in the crunchy chocolate mixture, allow excess to drip off, then place on parchment paper, and in the fridge 10-15 minutes until chocolate has hardened
  • Enjoy!

You can skip the freezing part, and simply place some hazelnut butter and a hazelnut in the center of your brownie

Be careful though, because the hazelnut butter might ooze out some this way

Variations for Dietary Preferences

  • Cacao Powder– or cocoa powder, or half it with chocolate protein powder for a protein boost
  • Almond flour – can sub for oat flour in the brownie base
  • Pure Maple Syrup – do not sub for a granular sweetener. You can sub for medjool date syrup or sugar free syrup if you prefer
  • Hazelnut butter – if you’d like to change the flavor feel like to use almond butter or peanut butter
