Healthy Homemade Ferrero Rocher

Ingredients

Base

  • 8 whole medjool dates
  • 1/2 cup almond flour
  • 1/3 cup cocoa powder
  • 3 tbsp almond butter
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla syrup

Center

For coating

  • 3/4 cup dark chocolate
  • 1 tbsp coconut oil
  • ~2 tbsp finely chopped hazelnuts

Instructions

  • Dip each hazelnut in hazelnut butter then place in the freezer for 1 hour. If you hazelnut butter isn't runny warm it for 15-30 seconds with a pinch of coconut oil
  • Process brownie ingredients together until smooth
  • Roll into 9 balls
  • Flatten each ball and place frozen hazelnut butter wrapped hazelnut inside the brownie dough and wrap the brownie dough around it to fully enclose, place stuffed balls in the fridge
  • Melt chocolate and coconut oil together until smooth, in 30 second intervals, then stir in crushed hazelnuts
  • Dip each brownie ball in the crunchy chocolate mixture, allow excess to drip off, then place on parchment paper, and in the fridge 10-15 minutes until chocolate has hardened
