These Healthier Christmas Crack Cookie Sandwiches are made with organic crackers, a simple homemade caramel sauce, and rich sea salted dark chocolate

They can be completely gluten free, they’re dairy free, and refined sugar free

  • You can adjust them to your preferences, using milk chocolate, dark chocolate, or white chocolate

Ingredients

  • 32 Homemade Ritz Crackers
  • Homemade Caramel
  • 1/3 cup creamy peanut butter or cashew butter (or 1/2 of each for ideal caramel flavor)
  • 1 tbsp coconut oil
  • 1 heaping scoop collagen peptides *
  • 2 1/2 tbsp pure maple syrup
  • For coating
  • 1/2 cup dark chocolate
  • 1/2 tbsp coconut oil
  • Dye free sprinkles – I like GoSuperNatural brand

Process

  • Melt your coconut oil, and whisk in collagen. Whisk together remaining caramel ingredients
  • Place your organic cracker rounds (mine are from Whole Foods / Amazon Fresh ), or your homemade gluten free ritz crackers, into muffin liners, and dollop with caramel
  • Place more crackers overtop and freeze for 20 minutes
  • Melt your dark chocolate with a pinch of coconut oil in 30 second intervals, stirring in between each, until smooth
  • Use a fork to dip each cracker sandwich into the chocolate, allow excess to drip off, and place on parchment paper
  • Top with dye-free sprinkles, and refrigerate an additional 10-15 minutes until chocolate is firm
  • Enjoy!

I love how easy it to just add all of the caramel ingredients to a bowl, mix until gooey, drip overtop your crackers, and refrigerate!

Variations for Dietary Preferences

  • Coconut – if not ed

Make a mix of white chocolate, dark chocolate, and white chocolate to satisfy all your guests this Christmas!

Notes

Collagen is optional. It adds extra gooeyness to the caramel, but can easily be left out without affecting taste
You can use regular Ritz, homemade ritz (they’re soo worth it!), or organic cracker rounds (amazon fresh / whole foods carries one with simple ingredients )
