Melt your coconut oil, and whisk in collagen. Whisk together remaining caramel ingredients
Place your organic cracker rounds (mine are from Whole Foods / Amazon Fresh ), or your homemade gluten free ritz crackers, into muffin liners, and dollop with caramel
Place more crackers overtop and freeze for 20 minutes
Melt your dark chocolate with a pinch of coconut oil in 30 second intervals, stirring in between each, until smooth
Use a fork to dip each cracker sandwich into the chocolate, allow excess to drip off, and place on parchment paper
Top with dye-free sprinkles, and refrigerate an additional 10-15 minutes until chocolate is firm
