St. Patrick’s Day Jello Cups – Dye-Free!

These St. Patrick’s Day Jello Cups are artificial dye-free, and actually require no artificial flavored jello packets!
They’re made with just real fruit juice (the kind with only 1 ingredient and no added sugar), real fruit, and real grass fed beef gelatin

Key Ingredients
- 2 cups Orange Juice Or lemonade – Uncle Matt’s organic is my favorite brand
- 2 Tbsp Grass-Fed Gelatin
- 1/4 tsp Spirulina Powder Blue. Or matcha powder, or natural colorant of choice
- Whipped cream
- 3/4 cup Heavy Whipping Cream
- 1/4 cup Vanilla Protein Powder – just ingredients is my favorite clean ingredient brand. Use code colleenF10 to save sitewide
- 1/4 cup Powdered Monkfruit Sweetener – Lakanto Or organic powdered sugar*
- 1 – 2 Tbsp Arrowroot Flour *
- 1 tsp Pure Vanilla Extract
Process
- Whisk gelatin & 1/4 cup juice in a small bowl. After a couple minutes it will thicken
- Warm the rest of the juice on the stovetop on low-medium heat
- Once warm, add gelatin mixture and stir until dissolved
- Mix a tiny pinch of blue spirulina powder (or matcha powder) with a bit of water to fully dissolve. Gradually add to juice mixture until desired green shade is achieved
- Pour into jello cups, and place in the fridge for at least 2 hours
- For whipped cream- chill a mixing bowl, then use a hand or stand mixer to whip all ingredients together. If using a powered monkfruit you’ll want to add 1-2 tbsp of the arrowroot or tapioca flour to help thicken it (powdered sugar already has this in it)
- It will take 5-8 minutes of whipping to fully whip. Don’t give up! All of sudden it will thicken and be that perfect whipped cream texture!
- Top jello cups with whipped cream and dye free spineless and enjoy!
