Whisk gelatin & 1/4 cup juice in a small bowl. After a couple minutes it will thicken
Warm the rest of the juice on the stovetop on low-medium heat
Once warm, add gelatin mixture and stir until dissolved
Mix a tiny pinch of blue spirulina powder (or matcha powder) with a bit of water to fully dissolve. Gradually add to juice mixture until desired green shade is achieved
Pour into jello cups, and place in the fridge for at least 2 hours
For whipped cream- chill a mixing bowl, then use a hand or stand mixer to whip all ingredients together. If using a powered monkfruit you'll want to add 1-2 tbsp of the arrowroot or tapioca flour to help thicken it (powdered sugar already has this in it)
It will take 5-8 minutes of whipping to fully whip. Don't give up! All of sudden it will thicken and be that perfect whipped cream texture!
