Dye-Free St. Patrick’s Day Jello Cups

Ingredients

  • 2 cups Orange Juice Or lemonade
  • 2 Tbsp Grass-Fed Gelatin
  • 1/4 tsp Spirulina Powder Blue. Or matcha powder, or natural colorant of choice

Whipped cream

  • 3/4 cup Heavy Whipping Cream
  • 1/4 cup Vanilla Protein Powder
  • 1/4 cup Powdered Monkfruit Sweetener - Lakanto Or organic powdered sugar*
  • 1 - 2 Tbsp Arrowroot Flour *
  • 1 tsp Pure Vanilla Extract

Instructions

  • Whisk gelatin & 1/4 cup juice in a small bowl. After a couple minutes it will thicken
  • Warm the rest of the juice on the stovetop on low-medium heat
  • Once warm, add gelatin mixture and stir until dissolved
  • Mix a tiny pinch of blue spirulina powder (or matcha powder) with a bit of water to fully dissolve. Gradually add to juice mixture until desired green shade is achieved
  • Pour into jello cups, and place in the fridge for at least 2 hours
  • For whipped cream- chill a mixing bowl, then use a hand or stand mixer to whip all ingredients together. If using a powered monkfruit you'll want to add 1-2 tbsp of the arrowroot or tapioca flour to help thicken it (powdered sugar already has this in it)
  • It will take 5-8 minutes of whipping to fully whip. Don't give up! All of sudden it will thicken and be that perfect whipped cream texture!
  • Top jello cups with whipped cream and dye free spineless and enjoy!
