Key Ingredients

  • Cashew butter – provides that cookie dough texture, but is more neutral in taste, so it won’t take away from the blueberry lemon flavor like peanut butter would

  • Lemon extract – not necessary if using Lemon protein powder. If using vanilla you may want more of a lemon taste, and since you don’t want to add liquid here in the form of lemon juice, the extract is perfect
  • Lemon zest – amplifies the lemon taste

Ingredients

  • 1/2 cup Cashew Butter
  • 6 Tbsp Vanilla Protein Powder
  • 3 Tbsp Almond Flour
  • 3 Tbsp Pure Maple Syrup
  • 1 tsp Pure Vanilla Extract
  • 1/2 tsp Lemon Extract
  • 1 whole Lemon Zest
  • 1/3 cup Dried Blueberries, Unsweetened
  • 2 Tbsp Coconut Butter, Organic
  • 1 tsp Lemon Zest

Process

  1. Mix all dough ingredients together until smooth
  2. Fold in dried blueberries
  3. Press down into loaf tin lined with parchment paper and top with more blueberries
  4. Refrigerate for 1 hour
  5. Slice into 6 bars
  6. Drizzle with melted coconut butter & top with more lemon zest
  7. Refrigerate another 15 min until glaze is firm
  8. Enjoy!
  9. Keep stored in the fridge

Variations for Dietary Preferences

  • Cashew butter – can replace with sunbutter or vanilla oat butter like the oat haus brand
  • To keep it vegan – use a plant based vanilla protein powder
  • You can replace the pure maple syrup with honey
  • You can use freeze dried blueberries in place of dried bluerries
    • Fresh or frozen blueberries will leave these soggy, so I do not recommend

  • 1 tsp Lemon Zest

Instructions

  • Mix all dough ingredients together until smooth
  • Fold in dried blueberries
