Blueberry Lemon Protein Bars

Ingredients

Bars

  • 1/2 cup Cashew Butter
  • 6 Tbsp Vanilla Protein Powder
  • 3 Tbsp Almond Flour
  • 3 Tbsp Pure Maple Syrup
  • 1 tsp Pure Vanilla Extract
  • 1/2 tsp Lemon Extract
  • 1 whole Lemon Zest
  • 1/3 cup Dried Blueberries Unsweetened

Glaze

  • 2 Tbsp Coconut Butter Organic
  • 1 tsp Lemon Zest

Instructions

  • Mix all dough ingredients together until smooth
  • Fold in dried blueberries
  • Press down into loaf tin lined with parchment paper and top with more blueberries
  • Refrigerate for 1 hour
  • Slice into 6 bars
  • Drizzle with melted coconut butter & top with more lemon zest
  • Refrigerate another 15 min until glaze is firm
  • Enjoy!
  • Keep stored in the fridge
