Blueberry Lemon Protein Bars

With a melt-in-your-mouth cookie dough texture, these copycat perfect bars are a delightful way to curb that sweet tooth, while hitting your protein goals, too!

Ingredients

Glaze

  • 2 Tbsp Coconut Butter Organic
  • 1 tsp Lemon Zest

Instructions

  • Mix all dough ingredients together until smooth
  • Fold in dried blueberries
  • Press down into loaf tin lined with parchment paper and top with more blueberries
  • Refrigerate for 1 hour
  • Slice into 6 bars
  • Drizzle with melted coconut butter & top with more lemon zest
  • Refrigerate another 15 min until glaze is firm
  • Enjoy!
  • Keep stored in the fridge
