Key Ingredients
- Banana– adds sweetness without the need for added refined sugars
- Peanut butter – adds flavor and acts as a binder in these flourless cookies. Feel free to sub almond butter, or nut butter of choice
- Pure Maple Syrup – not to be confused with pancake syrup, which is made from high fructose corn syrup. Pure maple syrup is a natural sweetener that is lower glycemic index than white table sugar, it actually contains vitamins, too

- Collagen – also optional; adds gooeyness to the caramel coating. Collagen is rich in protein, glycine, and is great for hair, skin, nails, and the gut lining too
- Rolled oats – acts as a flour / binding agent to keep the cookies held together. Using gluten free organic sprouted oats are also full of fiber and nutrition!

Ingredients
- 1 whole Banana, Ripe
- 1/4 cup Creamy Peanut Butter, Or any nut butter
- 2 – 3 Tbsp Pure Maple Syrup
- 6 Tbsp Vanilla Protein Powder
- 1 cup Sprouted Rolled Oats – One Degree Organic
- 1/3 cup Dark Chocolate Chips
- 1 Tbsp Sugar-Free Chocolate Gems

Process
- Mash banana, then mix in remaining ingredients
- Fold in chocolate chips
- Use a spoon to scoop dough onto parchment paper lined baking sheet, and press down with a fork
- Place dye free chocolate gems on top if desired
- Bake at 375 for 12 minutes
- Top with flakey sea salt and enjoy!
Variations for Dietary Preferences
- Pure Maple Syrup– You can replace with honey or sugar free liquid sweetener for a lower carb option
- Peanut butter – can replace with almond butter, cashew butter, sunbutter, or vanilla oat butter.
- Vanilla protein powder – you can replace with oat flour
- Peanuts – can sub any crushed nuts or puffed quinoa to keep nut free
