This Caramel Apple Snickers Cheesecake Mousse is gluten free, refined sugar free, and has a boost of protein!
It encompasses the flavors of caramel apples, snickers, and a velvety smooth cheesecake all in one!
It’s completely no bake, although you could bake the apples and warm your caramel prior to drizzling for a contrast of warm and cold!

- Cream cheese – provides a thick base, allowing it to whip up and adding the traditional cheesecake falvor
- Cottage cheese – adds smoothness, volume, and boosts the protein content

- Almond butter – adds a delicious flavor and ties the snickers flavor in
- Green apples – the cheesecake mousse is sweet, so serving with tart granny smith apples really hits all those taste buds!

How to Make Caramel Apple Snickers Cheesecake Mousse
- Whip your cream cheese until smooth
- Add whipped cream cheese, cottage cheese, almond butter, pure maple syrup, vanilla protein powder, and vanilla extract to the bowl, or a food processor / blender, and whip/blend until completely smooth, scraping the sides to incorporate everything
- Place in the fridge while you prepare the rest
- Make caramel by whisking all ingredients together until smooth and drippy
- At this point you can choose to add the cheesecake to individual servings jars, or a large dish for serving with apple slices
- Slice the tops off of your apples, and use a spoon to scoop out the center
- Pour your mousse into a piping bag and pipe into the center of your apples
- drizzle with caramel and chopped homemade snickers
- and enjoy!






I love how easy it to just add all of the filling ingredients to a blender, mix, and pour!
Variations for Dietary Preferences
- Cream cheese – you can sub vegan cream cheese
- Cottage cheese – You can make this vegan by using 8 oz vegan cream cheese plus 1/2 cup full fat greek style yogurt
- Pure maple syrup – you can sub for honey, medjool date syrup, or sugar free syrup
- Almond butter – can also use peanut butter. You can omit the nut butter all together if you wish, but it will take away slightly from the thickness
- Vanilla protein powder – you can leave it out, or use peanut butter powder in place (just 2-3tbsp). The french vanilla does add to the flavor, so taste your mousse for sweetness and adjust accordingly

- 8 oz full fat organic cottage cheese
- 1/3 cup french vanilla protein powder
- 3 tbsp almond butter
- 2 tbsp pure maple syrup
- 1 tsp vanilla extract
Caramel
- 1/4 cup creamy peanut butter or cashew butter
- 2 tbsp pure maple syrup
- 1 tbsp melted coconut oil
1 Homemade Snickers Bar
