Snickers Caramel Apple Cheesecake Mousse

This Caramel Apple Snickers Cheesecake Mousse is gluten free, refined sugar free, and has a boost of protein!
It encompasses the flavors of caramel apples, snickers, and a velvety smooth cheesecake all in one!
It's completely no bake, although you could bake the apples and warm your caramel prior to drizzling for a contrast of warm and cold!

Ingredients

  • 6 Granny Smith Apples

Cheesecake Mousse

  • 6 oz full fat organic cream cheese
  • 8 oz full fat organic cottage cheese
  • 1/3 cup french vanilla protein powder
  • 3 tbsp almond butter
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla extract

Caramel

  • 1/4 cup creamy peanut butter or cashew butter
  • 2 tbsp pure maple syrup
  • 1 tbsp melted coconut oil

1 Homemade Snickers Bar

Instructions

  • Whip your cream cheese until smooth
  • Add whipped cream cheese, cottage cheese, almond butter, pure maple syrup, vanilla protein powder, and vanilla extract to the bowl, or a food processor / blender, and whip/blend until completely smooth, scraping the sides to incorporate everything
  • Place in the fridge while you prepare the rest
  • Make caramel by whisking all ingredients together until smooth and drippy
  • At this point you can choose to add the cheesecake to individual servings jars, or a large dish for serving with apple slices
  • Slice the tops off of your apples, and use a spoon to scoop out the center
  • Pour your mousse into a piping bag and pipe into the center of your apples
  • drizzle with caramel and chopped homemade snickers
  • and enjoy!

Notes

If saving for later add the cheesecake filling to a jar and keep in the fridge. You can also keep the caramel in an air tight container in the fridge, and heat it prior to serving to get it drippy again.
