Christmas Light Sugar Cookies
These Christmas Light Sugar Cookies are gorgeous and are such a fun to mix it up from your traditional sugar cookies!
They’re gluten free, refined sugar free, dye free, and with a dairy free option, too! They’re soft, sweet, and so much fun!

I’ll be honest; before these cookies I never knew the difference between regular frosting and royal icing.. If you were unaware too, royal icing is perfect for dipping the cookie in, like in these cookies, or my Marbled Christmas Tree Cookies
Once I learned I didn’t have to actually use a knife to try and carefully spread the icing on, the process was SO much smoother!

Serves: 12
Ingredients
- 1/4 cup Butter, Unsalted, Or vegan butter
- 2 Tbsp Coconut Oil, Softened
- 6 Tbsp Coconut Sugar, Or granular sugar of choice*
- 1 whole Egg
- 1 tsp Pure Vanilla Extract
- 1/4 tsp Almond Extract
- 1 cup Almond Flour, +2 tbsp
- 1/4 cup Coconut Flour
- 1/4 tsp Baking Soda
- 1 cup Powdered Monkfruit Sweetener – Lakanto, Or organic powdered suagr
- 2 – 3 Tbsp Milk
- 1/4 cup Chocolate Gems – Unreal

Process
- Whip butter, coconut oil , and sugar together
- Add egg and extracts and whip again
- Add remaining ingredient
- Wrap dough in plastic wrap and refrigerate 30min
- Dust a surface with coconut flour, roll out dough, and use circle cookie cutter to cut out cookies
- Lined on parchment paper lined baking sheet and freeze for a few minutes if your dough has warmed
- Bake at 325 for 12-13 min
- Make icing by combining powdered sugar and milk together until drippy. Add more milk as needed
- Let cool completely, dip in Royal icing, allow icing the harden, then use melted chocolate as the string of lights
- Cut dye free chocolate gems in half* and place on your string
- Enjoy!
Variations for Dietary Preferences
- Butter– if dairy free you can sub this foe vegan butter or coconut oil
- Sweetener – You can use coconut sugar or organic cane sugar in place of the sugar free sweetener in the cookies
- Egg – I have not tried for certain, but a flax egg should hold up well in this recipe
- Almond flour – unfortunately, almond flour holds moisture much differently than other flours. I don’t believe substituting another flour would work well here.
