Cookie Dough Frosted Cupcakes

Combining two of your favorite indulgences in one! This smooth creamy cookie dough melts in your mouth with each and every bite.
Even better? These babies are gluten free, completely vegan, and free of refined sugar, too! The cookie dough frosting even has a protein boost!

Serves: 11
Ingredients
- 1 1/2 cup Gluten-Free Flour
- 1 cup Maple Sugar, +2 tbsp**
- 1/2 tsp Sea Salt
- 1 1/2 tsp Baking Soda
- 1/3 cup Cacao Powder, Raw
- 1/4 cup Avocado Oil
- 1 1/2 Tbsp Apple Cider Vinegar
- 1 tsp Pure Vanilla Extract
- 1 1/4 cup Water
- 3/4 cup Cashew Butter
- 1/3 cup Vanilla Protein Powder, *
- 1/4 cup Almond Flour
- 1/4 cup Coconut Oil, Softened
- 1/4 cup Pure Maple Syrup
- 1 tsp Pure Vanilla Extract
- 1/4 cup Mini Chocolate Chips, Semi-Sweet

Process
- Combine dry ingredients together
- Then pour in wet ingredients and combine well
- Pour into cupcake liners
- Bake at 350 for 13-15 minutes
- Remove from pan and onto a cooling rack after 10min
- Let cool completely
- Combine all your cookie dough ingredients together into a bowl, then fold in chocolate chips
- Pour into piping bag (optional) and pipe overtop cupcakes
- Enjoy right away or refrigerate!

*can sub coconut sugar for maple sugar *can sub oat flour for protein powder
