Cookie Dough Stuffed Cookie Sandwiches

The ULTIMATE cookie sandwich!
As indulgent as these cookie sammies look, they’re completely gluten free, dairy free, and refined sugar free, and the cookie dough filling has a boost of protein, too!

Serves: 7
Ingredients
- 1/3 cup Coconut Oil, Melted
- 3/4 cup Coconut Sugar
- 1 whole Egg
- 1 tsp Pure Vanilla Extract
- 1 cup Almond Flour
- 1 cup Oat Flour
- 1/2 tsp Baking Soda
- 1/4 tsp Sea Salt
- 1/2 cup Mini Chocolate Chips, Semi-Sweet
- 3/4 cup Cashew Butter
- 1/3 cup Vanilla Protein Powder
- 1/4 cup Almond Flour
- 1/4 cup Coconut Oil, Soft
- 1/4 cup Pure Maple Syrup
- 1 tsp Pure Vanilla Extract
- 1/4 cup Mini Chocolate Chips, Semi-Sweet

Process
- Whisk together coconut sugar, egg, and vanilla, then whisk in coconut oil until smooth
- -add in dry ingredients, then fold in chocolate chips
- -Roll into roughly 2tbsp size balls and place on parchment paper lined baking sheet (roughly 14 cookies)
- -bake at 350 for 10 minutes
- Allow to cool on baking sheet for 10 min then transfer to wire cooling rack
- Make your filling by combining all ingredients together until smooth, then folding in chocolate chips, place in piping bag, and load up the center of half your cookies. Top with remaining cookies to make sandwiches and enjoy!
