Whisk together coconut sugar, egg, and vanilla, then whisk in coconut oil until smooth
-add in dry ingredients, then fold in chocolate chips
-Roll into roughly 2tbsp size balls and place on parchment paper lined baking sheet (roughly 14 cookies)
-bake at 350 for 10 minutes
Allow to cool on baking sheet for 10 min then transfer to wire cooling rack
Make your filling by combining all ingredients together until smooth, then folding in chocolate chips, place in piping bag, and load up the center of half your cookies. Top with remaining cookies to make sandwiches and enjoy!
