Copycat Kudos Bars

Cleaned up, gluten free, dairy free, dye free, and refined sugar free kudos bars! With a little protein boost, too!

If you never had these growing up, they’re basically a granola bar with an added crunch of some Rice Krispies. They’re a mouthful of texture and flavor with each bite!

Serves: 12

Ingredients

  • 2 cups Brown Rice Crisps
  • 1 cup Gluten-Free Rolled Oats
  • 1/4 cup Collagen
  • 1/3 cup Coconut Sugar
  • 3 Tbsp Coconut Oil
  • 6 Tbsp Creamy Peanut Butter, Or nut butter of choice
  • 6 Tbsp Honey
  • 1 tsp Pure Vanilla Extract
  • 1 clove Dark Chocolate Chips

Process

  1. Line an 8×8 pan with parchment paper
  2. Combine rice krisps, oats, and collagen in a large bowl
  3. In a small pot combine sugar, honey, coconut oil, and peanut butter
  4. Warm over low-med heat until just starting to boil, stirring intermittently
  5. Remove from heat and stir in vanilla
  6. Pour overtop oat mixture and combine well
  7. Pour into 8×8 pan, and top with dye free mini chocolate gems (pure food by estee is the brand I used)
  8. Refrigerate 2-3 hours
  9. Remove from pan and slice into thin bars, dip the bottom half in melted chocolate, then place on parchment paper and drizzle with more chocolate
  10. Refrigerate a few more min until chocolate is hard
  11. Enjoy!
  12. Keep stored in fridge
