Line an 8x8 pan with parchment paper
Combine rice krisps, oats, and collagen in a large bowl
In a small pot combine sugar, honey, coconut oil, and peanut butter
Warm over low-med heat until just starting to boil, stirring intermittently
Remove from heat and stir in vanilla
Pour overtop oat mixture and combine well
Pour into 8x8 pan, and top with dye free mini chocolate gems (pure food by estee is the brand I used)
Refrigerate 2-3 hours
Remove from pan and slice into thin bars, dip the bottom half in melted chocolate, then place on parchment paper and drizzle with more chocolate
Refrigerate a few more min until chocolate is hard
