Copycat Kudos Bars

Ingredients

  • 2 cups Brown Rice Crisps
  • 1 cup Gluten-Free Rolled Oats
  • 1/4 cup Collagen
  • 1/3 cup Coconut Sugar
  • 3 Tbsp Coconut Oil
  • 6 Tbsp Creamy Peanut Butter Or nut butter of choice
  • 6 Tbsp Honey
  • 1 tsp Pure Vanilla Extract
  • 1 clove Dark Chocolate Chips

Instructions

  • Line an 8x8 pan with parchment paper
  • Combine rice krisps, oats, and collagen in a large bowl
  • In a small pot combine sugar, honey, coconut oil, and peanut butter
  • Warm over low-med heat until just starting to boil, stirring intermittently
  • Remove from heat and stir in vanilla
  • Pour overtop oat mixture and combine well
  • Pour into 8x8 pan, and top with dye free mini chocolate gems (pure food by estee is the brand I used)
  • Refrigerate 2-3 hours
  • Remove from pan and slice into thin bars, dip the bottom half in melted chocolate, then place on parchment paper and drizzle with more chocolate
  • Refrigerate a few more min until chocolate is hard
  • Enjoy!
  • Keep stored in fridge
