Cosmic Brownie Banana Bread

This Cosmic Brownie Banana Bread is rich, fudgey chocolate banana bread, with a silky chocolate ganache coating.
It’s pure bliss with each bite!
Gluten, dairy, and refined sugar FREE. I even included a protein boost as the cherry on top.

Serves: 12
Ingredients
- 3 whole Banana, Ripe
- 3 whole Eggs
- 1/4 cup Pure Maple Syrup
- 1 tsp Pure Vanilla Extract
- 1/4 cup Chocolate Protein Powder, Or more cacao
- 1/4 cup Cacao Powder, Raw
- 2 1/2 cups Almond Flour, Don’t pack
- 1 tsp Baking Soda
- 1 pinch Sea Salt
- 1/2 cup Baking Chocolate Chips
- 1/2 cup Dark Chocolate
- 3/4 cup Creamy Peanut Butter


As gooey, and finger-licking-good as the ganache is fresh, once refrigerated, it hardens into an indulgent chocolate fudge like texture!
I really couldn’t choose if I liked it better warm or cold!

Process
- Line a 9×5 loaf tin with parchment paper
- Whisk together eggs, banana, maple syrup, and vanilla
- Mix in dry ingredients with a spoon, then fold in chocolate chips
- Pour in loaf tin and bake at 350 for 50-60 min until a toothpick comes out clean
- Remove from oven , and after 10 minutes remove the whole loaf with the sides of parchment paper and place on cooling rack
- Cool for at least an hour
- Make ganache by melting chocolate chips, and mixing throughly with the peanut butter
- Pour over banana bread, then top with dye free gems or chocolate gems
- Ganache will be gooey, but once placed in the fridge for an hour it with thicken and solidify
- Enjoy!
