Line a 9x5 loaf tin with parchment paper
Whisk together eggs, banana, maple syrup, and vanilla
Mix in dry ingredients with a spoon, then fold in chocolate chips
Pour in loaf tin and bake at 350 for 50-60 min until a toothpick comes out clean
Remove from oven , and after 10 minutes remove the whole loaf with the sides of parchment paper and place on cooling rack
Cool for at least an hour
Make ganache by melting chocolate chips, and mixing throughly with the peanut butter
Pour over banana bread, then top with dye free gems or chocolate gems
Ganache will be gooey, but once placed in the fridge for an hour it with thicken and solidify
