These Cozy Cheesecake Stuffed Baked Apples bring out all the coziness of fall!

They’re gluten free, refined sugar free, and easy to make!

Made with local apples, a warm, thick, creamy cheesecake filling, a graham cracker crumble, and of course, a drizzle of homemade caramel!

These would also be great with a dollop of cold whipped cream over top to counter the warmth!

  • Cream Cheese- acts as the thick base for the cheesecake, and brings out that traditional cheesecake flavor
  • Plain Greek Yogurt – adds rich tanginess and a lighter, creamier texture while also increasing the protein
  • Light golden coconut sugar – adds sweetness without needing refined table sugar
  • Cashew butter – brings out a caramel taste, especially when combined with pure maple syrup
  • Pure Maple Syrup – adds to the creaminess and sweetness of the caramel

How to Make These Cozy Cheesecake Stuffed Baked Apples

  • Slice the tops off of your apples
  • Use a knife to slice a circular line around the inside of the apple, then use a spoon to dig out the center
  • Making filling by whipping cream cheese until smooth, then adding remaining ingredients and whip until completely smooth
  • Optional, place in a piping bag to neatly get into the apples
  • Melt butter and add to processed graham crackers, then spread overtop apples
  • Bake at 350 for 25 minutes
  • Make caramel by whisking ingredients together until smooth and runny. If your cashew butter was on the thicker side feel free to add more melted coconut oil or syrup
  • Drizzle overtop apples and enjoy!
  • Once cooled enough to pick up the apples I found it best to bite into it just like I was eating a regular apple

Variations for Dietary Preferences

  • Dairy free- feel free to use vegan cream cheese and a vegan greek style yogurt (like Kite Hill brand) to keep dairy free
  • Coconut Sugar – feel free to sub granular monkfruit sweetner, or organic cane sugar
  • Cashew butter – sub sun butter, peanut butter, or vanilla oat butter, like oat haus brand
  • Pure maple syrup – sub honey or sugar free syrup
  • Collagen – adds gooeyness to the caramel, but the caramel will taste great without it if you’d like to leave it out

Cozy Cheesecake Stuffed Baked Apples

Easy to make, and made with simple ingredients, this cozy fall dessert is light and so satisfying!

Ingredients

  • 6 apples

Cheesecake Filling

  • 8 oz cream cheese softened
  • 1/3 cup plain full fat greek yogurt
  • 1/4 cup light golden coconut sugar *
  • 1 tsp vanilla extract

Crumble

  • 1/2 cup graham cracker crumbs I like Simple Mills Sweet Thins
  • 2 tbsp melted butter

Caramel

  • 1/3 cup cashew butter
  • 3 tbsp pure maple syrup
  • 1 tbsp melted coconut oil
  • 1 heaping tbsp collagen peptides *
  • 1/2 tsp vanilla extract

Instructions

Notes

Collagen adds gooeyness to the caramel, but can be omitted without affecting the taste
Light golden coconut sugar is a 1:1 sub to raw cane sugar. Make sure not to use the one that is a sub for brown sugar. Or, use raw cane sugar
