Cozy Cheesecake Stuffed Baked Apples

Easy to make, and made with simple ingredients, this cozy fall dessert is light and so satisfying!

Ingredients

  • 6 apples

Cheesecake Filling

  • 8 oz cream cheese softened
  • 1/3 cup plain full fat greek yogurt
  • 1/4 cup light golden coconut sugar *
  • 1 tsp vanilla extract

Crumble

  • 1/2 cup graham cracker crumbs I like Simple Mills Sweet Thins
  • 2 tbsp melted butter

Caramel

  • 1/3 cup cashew butter
  • 3 tbsp pure maple syrup
  • 1 tbsp melted coconut oil
  • 1 heaping tbsp collagen peptides *
  • 1/2 tsp vanilla extract

Instructions

  • Slice the tops off of your apples
  • Use a knife to slice a circular line around the inside of the apple, then use a spoon to dig out the center
  • Making filling by whipping cream cheese until smooth, then adding remaining ingredients and whip until completely smooth
  • Optional, place in a piping bag to neatly get into the apples
  • Melt butter and add to processed graham crackers, then spread overtop apples
  • Bake at 350 for 25 minutes
  • Make caramel by whisking ingredients together until smooth and runny. If your cashew butter was on the thicker side feel free to add more melted coconut oil or syrup
  • Drizzle overtop apples and enjoy!
  • Once cooled enough to pick up the apples I found it best to bite into it just like I was eating a regular apple

Notes

Collagen adds gooeyness to the caramel, but can be omitted without affecting the taste
Light golden coconut sugar is a 1:1 sub to raw cane sugar. Make sure not to use the one that is a sub for brown sugar. Or, use raw cane sugar
