Frozen Snickers Protein S’mores
These frozen snickers protein s’mores are so incredibly satisfying!
They’re gluten free, refined sugar, easily dairy free, and protein packed!
Made with a light and fluffy s’mores whipped cream filling, a homemade gooey caramel filling with chopped peanuts, for your classic Snickers flavor, a layer of chocolate ganache, all wrapped in gluten free graham cracker squares

And bonus points, they’re completely no bake! Perfect for the summer heat when you so don’t want to turn that oven on.

Key Ingredients
- Coconut Whipped Cream – the base for the fluffy whipped cream filling
- Vanilla Protein Powder – adds thickness to the whipped cream, allowing them to freeze easier, and of course, adds a boost of protein to these delightful bites!

- Peanut Butter – adds to the snickers flavor and adds thickness to the whipped cream
- Graham Crackers – I used Once Again Organic Gluten Free Graham Crackers. Feel free to use any graham crackers of choice. Partake foods and Simple Mills make great gluten free graham crackers as well.

How to Make Frozen Snickers Protein S’mores
- Line an 8×8 or 9×9 baking dish with parchment paper (this will depend on the size of your graham crackers; mine fit best in 9×9)
- Line your graham crackers in a single layer throughout the bottom
- Mix your protein powder and peanut butter into your whipped cream, then pour overtop your graham crackers, and place in the freezer for 30 minutes
- Make caramel filling by whisking all ingredients together. Runny peanut butter works best here. Feel free to warm all ingredients slightly to get them runny
- Fold in chopped peanuts uif using, then pour and spread overtop slightly firm whipped cream, and place back in the freezer
- Next, make your chocolate ganache (easier to bite into when frozen, versus just melted and frozen chocolate), by melting peanut butter and chocolate together in 30 second intervals until smooth
- Pour overtop caramel
- Place remaining graham crackers on top and place back in the freezer for at least 4 hours
- Slice and enjoy!

Variations for Dietary Preferences
- Coconut – use any store bought whipped topping, or use my homemade high protein whipped cream topping! You can find it in THIS recipe
- Peanuts – sub cashew butter and any chopped nuts for the caramel filling
- Collagen – feel free to omit. It just adds a touch of gooeyness to the caramel
- Vanilla protein powder – I used a grass fed whey, but you can keep this completely dairy free by using a plant based protein powder

Whipped Cream Center
- 1 Tub Coconut Whipped Cream or use my homemade protein whipped cream! You can find it in THIS recipe
- 2 scoops Vanilla Protein Powder
- 2 tbsp Runny Peanut Butter
Caramel
- 2 tbsp Creamy Cashew Butter or Peanut Butter
- 1 tbsp Coconut Oil Melted
- 2 tbsp Pure Maple Syrup
- 1 heaping tbsp Collagen Peptides*
Chocolate Ganache
- 6 tbsp Creamy Peanut Butter
- 4 tbsp Dark Chocolate Chips
