Funfetti Protein Bread (Gluten free, dye free)

This funfetti bread is such a blast! With the pop of (natural) color, a dense banana bread texture, and a smooth protein icing, this is one snack you and your kids are both going to love!
I used my favorite high quality vanilla protein powder in the loaf and the icing. It has nothing artificial in it, so I am comfortable giving it to my kids.

Serves: 12
Ingredients
- 1 1/2 cup Gluten-Free Flour, *
- 99 grams Vanilla Protein Powder, *3 scoops
- 3/4 cup Granular Sugar Substitute – Swerve, Or organic cane sugar
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1 cup Plain Greek Yogurt
- 3 whole Eggs
- 1/3 cup Applesauce, Unsweetened
- 3 Tbsp Coconut Oil, Melted
- 1/2 tsp Almond Extract
- 2 Tbsp Sprinkles
- 1 cup Confectioners Sugar, Powdered – Swerve
- 1/3 cup Vanilla Protein Powder
- 6 Tbsp Milk
- 2 Tbsp Butter, Unsalted, Soft

Process
- Make loaf by whisking dry ingredients together, then fold in wet ingredients and combine until smooth
- Fold in sprinkles
- Pour into 9×5 loaf tin and bake at 320F for 50min
- Allow to cool completely
- Use a hand or stand mixer to whip ingredients together until smooth
- Pour frosting overtop loaf and top with more sprinkles
- Enjoy!
- Keep leftovers stored in the fridge
