Healthy Cosmic Brownie Stuffed Dates

No bake brownie batter stuffed inside plump medjool dates, topped with a creamy chocolate ganache coating. The brownie filling is gluten free, and has a protein boost!

Serves: 8

Ingredients

  • 8 whole Medjool Dates
  • 1/3 cup Chocolate Protein Powder
  • 1/2 cup Almond Flour
  • 2 Tbsp Creamy Peanut Butter
  • 2 Tbsp Pure Maple Syrup
  • 2 Tbsp Cocoa Powder
  • 1 Tbsp Flaxseed Meal
  • 2 Tbsp Almond Milk
  • 2 Tbsp 70% Cacao Organic Vegan Bitter-Sweet Dark Chocolate Chips (Bulk) – Pascha Chocolate Co.
  • 3 Tbsp Creamy Peanut Butter

Process

  1. Mix brownie dough ingredients together until smooth
  2. Refrigerate 10-20 min for easier rolling
  3. Slice open 8 dates and remove pit
  4. Roll dough into 8 balls and press inside the dates
  5. Melt chocolate and peanut butter (or can use 2 tbsp chocolate & 4 tbsp coconut cream for the ganache) until smooth
  6. Drizzle overtop dates, and top with dye free chocolate gems or sprinkles
  7. Refrigerate until ganache is firm, about 15min+
  8. Enjoy!
  9. Best stored in the fridge
