How to Make Key Lime Pie Mini Cheesecakes
- Make pecan filling by combining everything, minus pecans, on stovetop and whisk until melted and combined. Remove from heat. Add pecans until fully coated. Allow to cool
- Blend all of your shake ingredients together until smooth. For a thinner shippable shake you can omit the frozen cauliflower rice or use fresh banana instead of frozen. To keep it nice and thick keep the liquid to a minimum- just enough to get those ingredients blended together
- Pour into a glass, top with your pecan pie topping, and enjoy!
- You’ll have extra pecan pie filling. Store in an airtight container in the fridge and warm slightly to make gooey again for your next shake!

I love how easy it to just add all of the filling ingredients to a blender, mix, and pour!
Variations for Dietary Preferences
- Banana – adds creaminess and sweetness. You can replace with frozen avocado or raw cashews (roughly 1/3 cup) and add 2-3 tbsp sweetener such as pure maple syrup
- Cauliflower rice – adds more thickness, without adding any taste. Feel free to omit for a thinner smoothie. Can also sub for frozen zucchini slices (both tasteless in smoothies)
- Vanilla protein power – feel free to use any brand you like. Or sub for collagen peptides, or omit completely
- Ground flaxseed – sub chia or hemp seeds
